Our in-house brew system is still expected to be online and cranking out beer by Spring 2024. In the meantime, we are working with our friends in the industry to craft a series of collaboration beers to bring to our little corner on the oustkirts of town for your enjoyment.

A collaboration with our friends at Sneaky Penguin Brewing Company in Raleigh, NC, this winter saison features a complex grist of barley, wheat, and rye, Michigan-grown noble hop varietals, a few dashes of allspice in the boil, and a subtle dose of cranberry. Layers of citrus, warm spice, and tart fruit evolve on your palate as the glass empties. The perfect lighter option for the cold months.

We set out to brew an easy drinking, dry IPA, but brew day got wonky, and we used a yeast that didn’t quite do what we thought it would. The result? A bountiful, juicy, hazy IPA with all kinds of tropical fruit notes. Orange Starbursts and Sunny D with a substantial bitterness that stands on its own. It may not be what we thought it was going to be, but this happy accident is delicious nonetheless!

When we do get our system cranked up, below are just a sampling of the beers that we will be brewing. These represent just a handful of what we plan to produce, a simple snapshot of some of the recipes we have been fine-tuning for years. There will be more, and we will share them here when the time comes…

Our classic Carolina Saison brewed with NC Malts, Jarrylo Hops, and French Saison yeast. Dry, slightly peppery, and incredibly inviting, this little number is our favorite beer to brew and our favorite to drink.

“I miss you” in French actually literally translates to “You are missing from me.” An ode to those that can never be close enough, often enough. This Carolina Saison is brewed with NC Malts and a blend of hops, fermented clean with French Saison yeast, then dumped in a well-travelled oak barrel (previously holding Kentucky Bourbon and subsequently two batches of NC hard cider) and dosed with several Brettanomyces strains to slumber for over a year. The result is an incredibly clean and dry farmhouse ale with overripe fruit and vanilla notes. Best cherished with those you love and miss.

Soulshine - IPA

This hybrid IPA is brewed to be juicy and bright but not too hefty. Big tropical and citrus hop aromas and flavors with a relatively clean finish. It’s better than sunshine, better than moonshine, and it’s damn sure better than rain.

Layla - Saison

Our rustic take on a Belgian Wit, brewed with NC Malts and a splash of hops, and featuring fresh lime juice, lime zest, and juniper berries right in the boil. All of these features coalesce amid the softness of the wheat and the perfectly prickly carbonation.

Reveur - Belgian Wit

Layla is the younger cousin to Little Martha, crafted to be a table beer, lower in ABV and lighter in body. Brewed with NC Malts, jasmine rice, bright hops, and a healthy dose of lemongrass, then fermented clean. She’ll take you walking through the clouds.
